Our Organic Mexican Single Origin decaf coffee is decaffeinated using the Swiss Water Process method, a natural process which uses no chemicals and only water to extract caffeine from the coffee beans. The water containing the flavor, oils, and caffeine is passed through a carbon filtration system producing a 100% chemical free, 99.9% caffeine free coffee. The SWP process is not as harsh on the coffee, leaving true flavor behind without the astringent aftertaste typical to some traditionally decaffeinated coffees. This results in a coffee that is mild, fragrant, and sweet; an ideal choice for decaf lovers who want a flavorful coffee.
Our Organic Mexican coffee is grown in the southern state of Chiapas, where it thrives in the high growing region and rich volcanic soil. The state of Chiapas is located in the Sierra Madre Mountains and receives the perfect combination of rainfall and sunshine to ensure this strictly high grown bean flourishes. (A hard bean that takes a dark roast well.) This coffee is shade grown without the use of pesticides or fertilizers. Farmers in Chiapas have begun a transition back to organic farming techniques as a way to achieve self-sufficiency and to create sustainability for their communities. The continued development of a network of Fair-Trade farmers’ cooperatives is also helping local people to improve their quality of life. Higher in altitude, Chiapian coffees are brighter & sweeter with a clean lingering finish.
