Processing refers to how the coffee cherries are handled after harvesting. While not discussed as often as other factors like altitude, processing can have a significant impact on flavor. Giling-Basah, or Wet-Hulled, processing is specific to Indonesia and provides a unique earthy flavor and deeper body we particularly enjoy!
